I had the chance Andrew Rigie and Paul Seres of the New York State Restaurant Association (NYSRA) and the New York Nightlife Association (NYNA), respectively. They're two of the guys responsible for shaping policy around nightlife in New York and making sure it stays legendary the full interview is (here).
